For the sake of the respect of the environment, the entire parcels are covered with grass. This way, it avoids the soil erosion during heavy rain, it allows biodiversity, insects and flowers to settle, and it also supports a better rooting for the vines. In the near future, for the vintage of 2022, the domain will do 100% organic farming.
The growth of the wine
At the domain Saint Firmin, we are devoted to work in the respect of the substance. The treatment of the bunches is softly applied in order to avoid oxidization or an unwanted taste. The grapes are delicately manipulated from the gathering to the winery. The harvest is made at the optimal time to guarantee perfectly ripen grapes. Frail and alive, our product is surrounded by the best care: every harvest is made at night. This process allows the preservation of the aromas and avoids the contact between the grapes and the sunlight. Thus avoiding the phenomena of the grapes’ oxidation. The pressing is made at low temperature under controlled atmosphere, ensuring the preservation of the aromas. This is, of course, made under the stricter hygienic conditions. Then, starts the attention period for the juice. Initiating the fermentation, controlling, tasting, dosing on a daily basis… All these steps are different phases leading towards a good winemaking. The blend of wines will result in the selection of the vintages for the barrel ageing. Our barrels, in French oak, come from the forests of the Vosges mountain or from the Allier. Finally, the bottling is done throughout the seasons, when the wine reveal the best of itself.
