A vineyard in organic farming
Out of respect for the environment, all our plots are grass-covered. This natural ground cover prevents soil erosion during heavy rains and fosters a rich biodiversity of beneficial insects and wildflowers, which in turn promotes deep and strong rooting for our vines. Since the 2022 vintage, the estate has proudly held the French Organic Farming certification (AB).
The Winemaking Process
At Domaine Saint Firmin, we are dedicated to respecting the “raw material.” We handle our grapes with the utmost care to avoid oxidation or unwanted flavors, from the vine all the way to the cellar.
- Night Harvesting: Because grapes are fragile and “alive,” we harvest exclusively at night. This ensures the fruit remains cool, preserving delicate aromas and preventing oxidation caused by the heat of the sun.
- Precision Pressing: Pressing is performed at low temperatures under a controlled atmosphere to lock in the freshness and aromatic profile of each variety, all under the strictest hygienic conditions.
- The Art of Fermentation: This is a period of constant attention. We initiate fermentation, then monitor, taste, and adjust on a daily basis to ensure the highest quality winemaking.
- Blending & Aging: The final blending process determines which cuvées are selected for barrel aging. We use French oak barrels sourced from the prestigious forests of the Vosges and the Allier.
- Bottling: Finally, bottling takes place throughout the seasons, only when the wine has reached its peak expression.
